1) Eggs Benedict recipe

Ingredients

Hollandaise Sauce

  • 4 egg yolks
  • 1 Tbsp lemon juice
  • 1 stick butter 1/2 cup melted
  • 1/8 tsp paprika
  • 1/8 tsp salt

Eggs Benedict

  • 8 eggs
  • 8 pork roll slices
  • 4 English muffins sliced in halves

Instructions

For the hollandaise sauce

  1. Separate the four egg yolks from their egg whites. Save the egg whites in your fridge for an egg white scramble tomorrow!
  2. Melt the butter in a bowl using the microwave, or on the stove with a small pot.
  3. Place the egg yolks in a food blender with the lemon juice. Pulse a few times, or blend for a few seconds.
  4. While pulsing, slowly pour in the butter from the top. Once fully mixed in, pulse 2 or 3 more times.
  5. Sprinkle in the paprika and salt and mix with a spoon.

For the eggs Benedict

  1. Fill a large skillet halfway with water, cover and bring it to a boil.
  2. While waiting for it to boil, toast the English muffin halves. Place two halves on each plate.
  3. Heat a medium-sized skillet. Once warm, cook the pork roll slices—two minutes on each side. Place one slice of pork roll on each English muffin half.
  4. Once the water is boiling, remove the lid. Crack an egg and slowly slip it into the boiling water. Do this for all 8 eggs. Turn off the heat, cover the skillet again, and wait 5 minutes.
  5. Using a slotted spoon, remove the eggs and place each one on a prepared muffin half.
  6. Pour the hollandaise sauce on top. Serve with salt and pepper cracked on top if desired.

2) Savory French toast

Ingredients

  • 1 egg
  • 2 Tbsp milk
  • Dash of salt
  • Dash of pepper
  • Dash of Italian seasoning
  • Slices of bread the bread can be stale!
  • 1/2 Tbsp butter
  • 1 cup cherry tomatoes
  • Cooking spray
  • Grated Parmesan cheese for serving

Instructions

  1. Preheat the oven to 400 degrees.
  1. Spray down a baking sheet and place the cherry tomatoes on it. Spray the tops of the tomato with your oil spray (very lightly!)
  2. Roast in the oven for 20 minutes.
  3. While cooking, whisk together the egg and milk.
  4. Sprinkle in a dash of salt, pepper, and Italian seasoning. Whisk to combine.
  5. Heat up a skillet over medium-low heat. Melt the butter in the pan, making sure the bottom is fully coated.
  6. Dip the bread in the egg mixture, making sure both sides are soaked. Place on the pan. Repeat for each slice of bread, that can fit on the pan.
  7. Flip when the bottoms of the toast get golden brown, about 2 to 3 minutes.
  8. Serve with roasted cherry tomatoes on top, sprinkled with grated Parmesan cheese.

3) Applesauce pancakes

Ingredients

  • 2 cups all-purpose flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons coarse salt
  • 2 large eggs
  • 2 cups milk, room temperature
  • 3/4 cup applesauce, plus more for serving
  • 4 tablespoons unsalted butter, melted, plus more for griddle
  • Sour cream, for serving

Instructions:

  • Step 1: Whisk together flour, sugar, baking powder, and salt in a bowl. Add eggs, milk, applesauce, and butter; whisk just until combined (batter should be slightly lumpy).
  • Step 2: Heat a griddle or cast-iron skillet over medium heat. Brush lightly with butter. Working in batches, pour batter onto griddle 1/2 cup at a time, spacing pancakes 2 inches apart. Cook until bubbles appear on top and edges are slightly dry, 2 to 3 minutes. Flip and cook until golden brown on underside, about 3 minutes more. Repeat with remaining batter, wiping griddle clean and lightly buttering between batches.
  • Step 3: Layer sour cream and applesauce between pancakes; serve with more of each on the side.
